A robot palletiser is built for high speed and works behind a guard, a cobot palletiser is more compact and works safely next to your staff. Robot palletisers use an industrial robot arm and are meant for fast, specific tasks, while cobot solutions have a very compact design, work safely with people and need no safety fencing. Which one fits depends on your speed and the space you have.
